Chocolate Cake for Breakfast!

I’ll admit it; I LOVE sweets! I think I inherited that from my dad. 🙂 On the Trim Healthy Mama plan, cake for breakfast is encouraged!!!! This is one of my favorite breakfast cakes as it’s not too sweet and it’s not super high in calories. I find that when I’m working and have to leave the house by 7 am, a lighter breakfast is in order. Sheri Graham’s chocolate cake to the rescue! This is considered a Fuel Pull cake if you are following the THM plan. This means it is low carb and low fat. Here it is before baking:

Bub’s Version:  He mixes his Oikos Strawberry Zero in with the cake.

Maddie’s version:  

I add some plain Greek nonfat yogurt and berries to the top of the cake, but Bubs adds Cabot Whipped Cream (we were out this morning)! Maddie, she eats hers with some yogurt on the side. Today, she opted for no yogurt at all.  Maddie is definitely not a morning eater.  This meal kept me full for over 4 hours!

Here’s Sheri’s recipe if you’d like to give it a try:

I quadruple the recipe, bake it for 20 minutes at 350 degrees in an 8 x 8 pan, and cut it into 4 pieces. Enjoy!
